Skillet Crack Chicken Keto Thighs




Ingredients
  • 4 whole chicken thighs
  • 1 cup chicken bone broth
  • 5 ounces Cream Cheese
  • 1-1.5 tablespoon ranch seasoning This is what I use
  • 1/4 cup shredded sharp cheddar cheese
  • 2 tablespoon olive oil for cooking
  •  salt and pepper to taste

Servings:
  • 4 chicken thighs

Instructions 
  1. Seasoning the chicken thighs with salt and pepper. Then using olive oil brown the chicken in a medium hot pan. Chicken skin just needs color. It doesn't have to be cooked all the way through.
  2. After chicken is browned on both sides remove the chicken from the pan. Lower the heat to medium and pour in broth.
  3. Bring broth to boil then lower the heat to medium/low to being to simmer. Add in cream cheese.
  4. Toss in tablespoon to tablespoon and a half of ranch seasoning mix. Depending on how strong you'd like the ranch flavor.
  5. Add chicken thighs back into the broth and cream cheese. Cover and simmer to for sauce to thicken.
  6. Once sauce has reduced take off heat and top each thigh with cheddar cheese. Place in oven on broil setting.
  7. Allow to cheese to melt and brown then pull out of oven. Let cool slightly then serve.

Killer Chicken Thigh Marinade

Ingredients 8 bone-in, skin-on chicken thighs (about 4 lbs) 2 Tbsp olive oil 1 Tbsp sesame oil 4 Tbsp low sodium soy sauce 1 Tbsp Worcestershire sauce 2 Tbsp lemon juice (or lime juice) 5 Tbsp honey (or maple syrup) 6 cloves garlic (minced) ½ tsp black pepper (freshly ground) 2 tsp kosher salt (plus more to taste) Instructions Mix all ingredients for the marinade together in a large bowl or a plastic Ziploc bag.
