Honey Lime Chicken Thighs

Ingredients 4 tablespoons lime juice freshly squeezed 2 tablespoons honey 1 tablespoon soy sauce 7 chicken thighs (about 7 or 8 chicken thighs, depends on the size of your skillet) 1/2 teaspoon salt 2 tablespoon olive oil 2 green onions chopped 1 lime sliced (for garnish only) Instructions In a small bowl combine lime juice, honey, soy sauce. Salt the chicken thighs with 1/2 teaspoon of salt (or more) thoroughly, all over, including under the skin. In 12-inch skillet, heat olive oil over medium-high heat. Add chicken thighs, skin side down, and cook for about 5 minutes until the chicken skin side gets nicely browned (make sure to get really nice brown, not just pale brown - it makes a difference in presentation). Turn chicken, so that skins sides are up and add lime-honey mixture to the skillet. CHICKEN ALFREDO LASAGNA ROLL UPS

INGREDIENTS 10 Lasagna Noodles 3 cups Chicken , cooked and shredded 16 ounces Ricotta Cheese 1 teaspoon Salt 1 teaspoon Italian Seasoning ½ teaspoon Onion powder ½ teaspoon Garlic powder 1.5 cups Alfredo Sauce, jarred 2 cups Mozzarella , shredded 1 cup Parmesan , shredded INSTRUCTIONS Bring a pot of water to a boil. Add lasagna noodles and cook according to package instructions until al dente. Drain water from the pot and place noodles on a flat surface. (I suggest using a piece of parchment paper). Preheat oven to 350 degrees F. In a large bowl combine shredded chicken, ricotta cheese, salt, onion powder, garlic powder, and Italian seasoning. Ingredients Chicken 1 Tbsp olive oil 2 large boneless skinless chicken breasts cut in half horizontally 2 tsp Italian seasoning 1/2 tsp kosher salt 1/4 tsp black pepper Bruschetta 4 Roma tomatoes seeded & finely chopped 1/4 red onion finely chopped 3 cloves finely chopped garlic 4 Tbsp shredded fresh basil 2 Tbsp olive oil salt to taste ½ cup freshly shredded Parmesan cheese 1/4 cup balsamic glaze Instructions Brush olive oil over both sides of chicken breasts. Spray a 9x13 baking dish with cooking spray. Dump one can of peaches into the baking dish. Drain the liquid from the other can and add the peaches to the baking dish.
